Super easy, super fast, super healthy side dish inspired by Giada’s Tuscan Kale Beans. Simply chop 2 bunches or 2 cups organic Tuscan kale finely, add to pot or skillet with some salt, chopped garlic, crushed red pepper, and olive oil on low heat. Once the kale tenderizes a bit add finely chopped sundried tomatoes. Once those start to get a lil plump/juicier (just 3 mins), add drained wet white beans (a can) - I used organic Great Northern beans. Let cool. Add parmagiano reggiano, toss together making sure not to break beans, and serve. Note: this is a cold/room temp bean dish so don’t overcook those beans because they’ll break down and get mushy!

Giada’s Spicy Bolognese - OMG. This took me 3 hours to make but it was so worth it. And now we have leftovers that can easily be frozen. Recipe in stories. She uses lamb + beef but I did all beef instead - Michael said this is his most favorite thing I’ve made for him yet - next to Onion Chicken as a close second. YUM!!!!!!!!!

I call this how to a) pamper yourself b) entertain & impress in a jif. Alerto: Trader Joe’s has BURRATA now and it’s absolutely incredible. If you’ve never had burrata I urge you to get it right now from TJs and devour it in the privacy of your living room before your siblings/spouse/ghosts see you. Just get a bottle of their balsamic glaze, some organic tomatoes of your choosing (I used cherry), some basil or oregano to top, and a couple slices of a French baguette (toasted if you like!) and place on pretty platter (I just used a plate cause I devoured this - see option a). YUM!

“Everything bagel avocado toast” YUM!!!! Thank you @vitalrootden for improving your old avocado toast tenfold. Used to have overly salty fried chickpeas .... now it has red pepper flakes, delish eggs, pickled onions, and GOAT CHEESE, plus yummy chopped almonds on the most divine sprouted bread. Yum yum yum
Last night was leftover potatoes, Trader Joe’s organic tri-colored cauliflower, and Giada de Laurentiis’ “broiled salmon” which I still haven’t figured out how to perfect temperature wise but maybe you all will be luckier! Salmon is supposed to be 145F degrees when cooked but I always manage to overcook it to 155 😭. It was way better than that one time I cooked it to 162 tho 🤣 I’m working on baking instead of broiling to see if I can get the temperature just right but until then here’s the recipe:
Giada’s Broiled Salmon:
+2 wild caught salmon filets +2 minced garlic cloves (or 1.5 tsp minced garlic)
+3/4 tsp freshly chopped thyme leaves +2 TBS Dijon mustard +1 TBS dry white wine (I used vinegar bc pregnancy lol)
+2 TBS whole grain mustard (like Maille brand)
+1 TBS Extra Virgin Olive Oil (I use TJs organic)
+Olive Oil cooking spray or just olive oil for coating foil
+fresh sea salt and black pepper +Lemon wedges (2-4)
Stir together the garlic, wine, oil, mustard. Preheat broiler. Line heavy rimmed baking sheet with foil. Spray w cooking spray or put some olive oil on it. Arrange the salmon fillets on baking sheet and sprinkle with salt and pepper. Broil 2 minutes. Take out of oven and spoon sauce over the fillets. Broil until fillets are cooked, about 5 minutes (Check temp for 145!). Serve w lemon wedges and side dishes.
