This marks my first official blog post on my new website. Congratulations for celebrating with me in this moment of sheer bliss.
I had the pleasure of venturing to the Upper West Side just yesterday, where I created my own version of carrot cake-- a delicious, dairy-free, gluten-free concoction, that could only have been better with frosting-- but was so sweet it didn't need anything but a trusty fork.
I originally wanted my family's favorite recipe of all time, which rumor has it takes our dear family friend MaryLou 8 hours to prepare just perfectly. But, much to my behest, I neither had the time nor the access to the recipe. So what does any tech savvy personal chef do in this day? The internet. And lucky me, I found a recipe from Southern Living, entitled "The Best Carrot Cake" and decided to try and adapt it to my liking, and judge whether or not it lived up to its name.
Well, dear friends, it did. And I was quite pleased.
Here, is my adapted recipe from Southern Living.
Nutrishus GF, Dairy-Free Carrot Cake
- 2 cups all-purpose gluten free flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large organic, cage-free eggs
- 2 cups organic raw cane sugar
- 3/4 cup coconut oil
- 1/4 cup coconut cream
- 1/2 cup organic rice milk
- 2 teaspoons vanilla extract
- 2 cups grated organic carrot
- 1 (8-ounce) can crushed pineapple, drained
- 3 1/2-ounces sweetened, flaked coconut
- 1/2 cup chopped pecans
- 1/2 cup chopped walnuts
"Line 3 (9-inch) round cakepans with wax paper; lightly grease and flour wax paper. Set pans aside.
Stir together first 4 ingredients.
Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cakepans.
Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean."
