My Lunchbox: 5 Day Addition

Bonjour! It's been a day and a half since my last post, but working a 14 1/2 hour shift does something to my energy. The good news is that, despite my exhaustion, I'm having so much fun baking breads and dreaming up new ways to eat real food that I have decided to add an extra 5 days. I am even considering making this my everyday routine! Probably my favorite part about this challenge is that it has empowered me to have more self control at work. At home I am not usually tempted by processed foods because we don't have a lot of bad food in our pantry, but at work everything changes. It is a lot easier for me now to make sure I am not eating everything that constantly surrounds me: ingredient-rich ice cream, processed breads, and of course fried food, chips, and candy bars (which I don't really like anyway but get tempted by here and there). And, because I bring a lunchbox with everything I am going to eat for the day, I only eat until I am satisfied because I want to make sure when I am hungry later I have enough food in my box. For example, the day before yesterday I had a nectarine and green tea on my way to work, a whole wheat tortilla with egg whites and tomatoes for breakfast, tuna (celery, lemon juice, mustard, tomatoes) over spring mix with balsamic, blueberries, strawberries and almonds for an afternoon snack, and lemon-basil garlic chicken quinoa for dinner.

I already feel like I have more clearness of mind and my workouts are easier to do. And, my mom told me my skin was glowing yesterday morning...could be just a lucky coincidence but maybe it's that strict real food challenge!

Yesterday my lunchbox consisted of greek yogurt with homemade granola, blueberries, and honey before work. Then midmorning I had 2 egg whites and 1 egg with grape tomatoes. For lunch I had fresh all natural grilled chicken (salt, pepper, olive oil) over spring mix with carrots, balsamic vinegar, grapes at work. When I got home I fell asleep because I was so tired from work, but when I woke up I managed to finally make homemade whole wheat sandwich bread while watching the rom com No Strings Attached (great movie btw). It was a win-win. The bread turned out delicious and I am so happy with the result, crusty, incredibly fresh, beautiful, flavorful, perfectly-baked loaf of bread.
