Man alive I am in heaven right now. I just finished the most delicious dinner I've had in a while. This recipe screams summer and it is light, fresh, colorful, satisfying, delicious, flavorful.. I could go on. I set out to cook some chicken to prep for dinners later this week and decided why not try out that quinoa in the pantry? I've heard all the buzz about this amazing protein-rich grain but after trying unsuccessfully to cook it one time a while back, I wanted to make sure that if I made it tonight it would turn out perfect. It was bliss. The texture was soft and it was perfectly translucent with its signature outer germ showing. This was literally just one big experiment and I am so excited about it. Pronounced "keen-wah", this gluten-free grain is one little tasty, healthy protein powerhouse! Enjoy!
Lemon-Basil Garlic Chicken Quinoa
1 cup 100% organic whole grain quinoa (cooked according to directions on box) (basically just put 1 cup quinoa and 3 cups water in pot, bring to a boil, cover for 4 minutes... allow to cook until all water is gone and you are left with translucent quinoa)
3 chicken breasts (6- 8 oz each) rubbed with sea salt and finely ground pepper, cooked in olive oil about 4 mins per side , cubed
Juice of 1 lemon
1 tbs garlic, minced
3 small vine ripened tomatoes, diced
1 tbs butter
Extra Virgin Olive Oil, 3-4 tbs
2 handfuls of fresh spinach & field leaves mix
freshly ground pepper
1 small onion or a qtr of a large white onion, thinly sliced and diced
After cooking chicken in olive oil on large skillet, remove chicken and add olive oil, tomatoes, garlic, onions to the skillet over medium-high heat. Cook until onions are translucent and tomatoes are cooked. Add spinach and field mix, allowing the leaves to wilt. Add freshly ground pepper and basil, chicken to skillet and cook for another minute so chicken gets reheated. Finally, squeeze juice of 1 lemon on top of cooked quinoa and add that to the skillet with the rest of the ingredients. Yummmmyyyy. Fold ingredients together so the quinoa mixes evenly with the chicken, tomatoes, etc. Cook in skillet for another minute until everything is at a good temperature. Serve immediately.
