NuTrish Salmon Burger 1/2 can pink salmon (trader joes or wherever) 1 tbs dijon mustard 2 tbs diced tomatoes or roasted peppers 1 tbs dill relish (or diced celery) 1 tbs lemon juice 1/3 cup bread crumbs* salt and pepper to taste 1 tsp dill weed, finely chopped (optional) 1 egg white (great for binding the cake, if you are putting cake on top of salad though it's not necessary)
About substitutions/additions: I change this recipe pretty much every time I make it. Sometimes I use panko bread crumbs, other times I don't use an egg, here and there I'll add cayenne pepper or nutmeg to change it up and skip the dill weed, it really just depends what I have on hand. It's super easy to change this recipe, in fact if you can even make a tuna burger with the same ingredients and it's delicious! Eye-ball the recipe, if it looks too moist add more bread crumbs, too dry add more lemon juice.
Balsamic Vinaigrette 1/3 cup olive oil 1/4 cup balsamic vinegar 1 tbs lemon juice herbs and spices (basil, salt, pepper) if you desire parmesean or locatelli cheese if you desire
