Nectarines, much like those delicious green apples I recently posted about, are sweet and juicy, and have numerous health benefits to make you love them even more. They are great sources of Vitamins C and A, fiber, beta carotene, calcium, potassium, and iron. Today, I tried something new and it turned out delicious! I am so excited to present to you my new
NuTrish Lemon-Honey Nectarine Vinaigrette 2 juicy nectarines, peeled 1/4 teaspoon nutmeg 2 tbs lemon 1-2tbs honey (more or less depending on sweetness of nectarines) 1/2 cup Extra Virgin Olive Oil 1/4 cup Raspberry Vinegar 1 tbs Red Wine Vinegar pinch of salt pinch of pepper
Put all these ingredients into a bowl and blend with handheld juice blender. The vinaigrette will look like this:
Then toss with Arugula, slivered almonds, grape tomatoes, shaved zucchini and yellow squash.
Also, what better way to get rid of the ends of your loaves of bread than by using them to make croutons?! These are AMAZING. Just when I thought I couldn't possibly appreciate TJ's California bread anymore, I find another amazing reason....
NuTrish Thyme Nutmeg Croutons 3 slices Trader Joe's California Bread, cubed 1/8 tsp. sea salt 2 tbs. extra virgin olive oil 1 tsp. thyme 1/2 tsp. nutmeg
Stir ingredients together in bowl. Place over aluminum foil covered baking sheet in oven at 425 degrees for approx 7 minutes. Toss over salad.
Add croutons and nectarines to salad. Voila!
