Breakfast this morning. It seems lately I've had a little obsession with the combination of apples and cinnamon. It's a match made in heaven. I used Maple Brown Sugar Steelcut Oatmeal (Trader Joes Freezer Section) and microwaved it for 3 minutes, then added 1 sliced Pink Lady apple and natural cinnamon. The apples soften really quickly so it becomes the texture of an apple pie. Delicious.
Also, today I made homemade Almond Butter for lunch. It's delicious, super easy, and much cheaper than buying it in the grocery store. NuTrish Almond Butter 2 cups Almonds (dry roasted, organic, no salt) 2 tsp 100% pure canola oil 1/4 tsp sea salt 1 tbs honey
Put ONLY the almonds in the food processor, for 8 minutes stopping at 2 minute intervals to scrape down the sides. After 8 minutes you should get a buttery consistency, then while it is blending add oil. Blend for 2 more minutes. Stop and add honey, sea salt stirring with a spatula or spoon. Voila! Spread on top of your favorite bread... or to go along with my theme... apples!!
